For most fruit trees, late winter to early spring while dormant, before the buds break, is the sweet spot.
Dormant-season pruning lets us see the branch structure clearly, shapes the tree for light and air, and gets the work done while disease pressure is low. There are exceptions worth knowing: apples and pears prone to fire blight are best pruned in dry conditions with clean tools, and cherries and plums with black knot are dealt with by cutting well below the knots.
